In a medium-sized pan, heat ghee, fry cashews in medium flame, and put them aside once they are golden brown
In the same pan, add mustard seeds, cumin seeds, chana dal, and ajwain powder, and let it splutter. Now add curry leaves and green chilies to it.
Now add grated carrots and salt to the pan. Cook for a couple of mins until the carrots are soft
Now stir in peas and cook for a min.
Add cooked rice and cashews and mix everything well, so that every morsel gets evenly coated with tempered seasoning and veggies. Check for salt; add if required. Turn off the flame and let it rest for 5 minutes, and serve
