Broccoli Pepper Rice

Ingredients
  

  • 1/2 cup broccoli, finey chopped
  • 1/2  bell pepper, finely chopped
  • 3 cherry tomatoes, halved
  • 1/2 garlic clove, grated
  • 1/2 tsp cumin powder
  • 1/2 tsp sumac
  • 1/2 tsp chili powder
  • salt to taste
  • 1 cup cooked rice

Method
 

  1. Heat oil in a pan over medium heat until shimmering.
  2. Add broccoli, bell pepper, and cherry tomatoes. Stir-fry for a few minutes.
  3. Add grated garlic, cumin powder, sumac, chili powder, and salt. Stir well to coat the vegetables evenly.
  4. Sauté until all the vegetables are fully cooked and tender.
  5. Add rice and mix thoroughly. Heat through for a couple of minutes and serve hot
