Tomato Carrot Rice

Got leftover rice? This is exactly what it's made for. Tangy tomatoes, sweet grated carrots, and a punchy tempering of mustard seeds, peanuts, and green chilies, it comes together in minutes and tastes like you spent much longer on it.

Ingredients
  

  • 2 medium tomatoes, finely chopped
  • 3-4 carrots, grated
  • 2–3 green chilies, slit
  • 3 cups cooked rice
  • 1 tsp chana dal
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 2 tbsp peanuts
  • pinch of turmeric
  • salt to taste
  • juice from 1/2 lemon
  • cilantro to garnish

Method
 

  1. Heat oil in a pan. Add mustard seeds, chana dal, cumin seeds, peanuts, and green chilies and let them crackle.
  2. Add grated carrot and sauté for a minute.
  3. Add chopped tomatoes, turmeric, and salt. Cover and cook until the vegetables are soft and cooked through.
  4. Remove the lid, adjust salt, and gently fold in cooled rice so the grains stay separate and don't turn mushy.
  5. Finish with a squeeze of lemon juice and garnish with fresh cilantro.
