- Heat oil in a pan. Add mustard seeds, chana dal, cumin seeds, peanuts, and green chilies and let them crackle.
- Add grated carrot and sauté for a minute.
- Add chopped tomatoes, turmeric, and salt. Cover and cook until the vegetables are soft and cooked through.
- Remove the lid, adjust salt, and gently fold in cooled rice so the grains stay separate and don't turn mushy.
- Finish with a squeeze of lemon juice and garnish with fresh cilantro.
