Tomato Carrot Rice

Got leftover rice? This is exactly what it's made for. Tangy tomatoes, sweet grated carrots, and a punchy tempering of mustard seeds, peanuts, and green chilies, it comes together in minutes and tastes like you spent much longer on it.

Ingredients
  

  • 2 medium tomatoes, finely chopped
  • 3-4 carrots, grated
  • 2–3 green chilies, slit
  • 1 cup un-cooked rice
  • 1 tsp chana dal
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 2 tbsp peanuts
  • pinch of turmeric
  • salt to taste
  • juice from 1/2 lemon
  • cilantro to garnish

Method
 

  1. Cook the 1 cup rice or use leftover rice
  2. Heat oil in a pan. Add mustard seeds, chana dal, cumin seeds, peanuts, and green chilies and let them crackle.
  3. Add Tomatoes and sauté until they are slightly mushy
  4. Add grated carrot, turmeric, and salt. Cover and cook until the vegetables are soft and cooked through.You can sprinkle some water if the mixture is dry
  5. Remove the lid, adjust the salt, and slowly add in the cooled rice so the grains stay separate and don’t turn mushy. Avoid mixing the rice immediately after it’s cooked,let it sit and dry for a while first.
  6. Finish with a squeeze of lemon juice and garnish with fresh cilantro.
