Butter Sautéed Pasta

Buttery, flavorful, and ready in one pot- this simple pasta recipe is a big lunchbox win in our house.

Ingredients
  

  • 1/2 tbsp olive oil
  • 1 tbsp butter
  • 1 clove minced garlic
  • 1/2 cup pasta
  • 1-1.5 cup broth, enough to cover the pasta
  • 2 tbsp cream
  • salt to taste
  • Itallian seasoning
  • pepper
  • shredded cheese

Method
 

  1. In a pot, heat olive oil and 1 tbsp melt butter together
  2. Add 1 clove minced garlic and sauté until fragrant.
  3. Add the 1 cup of uncooked pasta and pour in broth, just enough to cover the pasta (1-1.5 cup for rough reference). Water also works if you don't have borth. You can also cook the pasta seperately and add the cooked paste in this step.
  4. Cook until the pasta is tender and the liquid is mostly absorbed
  5. Stir in 2 tbsp cream, then season with salt, Italian seasoning, and pepper.
  6. Add grated cheese and stir until melted.
  7. Pack into an insulated lunchbox while warm, your delicious pasta is ready!

Sweet Potato Fries

Crispy on the outside, soft inside-baked sweet potato fries that are naturally sweet and perfect for kids lunchbox

Cook Time 20 minutes

Ingredients
  

  • 1 sweet potato, peeled and cut into thin fry-shaped sticks
  • 1 tbsp butter melted
  • 1/2 tbsp paparika
  • salt to taste
  • 1 tsp pepper
  • sprinkle cinnamon
  • 1 tbsp corn starch or rice flour for crispinesss (optional)

Method
 

  1.  Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Peel 1 sweet potato and cut into thin fry-shaped sticks completely dry with a towel, removing excess moisture is key to crispiness.
  3. If using cornstarch or rice flour for extra crispiness, add 1 tbsp and toss it then add in 1 tbsp melted butter, ½ tbsp paprika, salt to taste, a pinch of pepper, and a sprinkle of cinnamon. Toss again until every piece is evenly coated.
  4. Spread the fries in a single layer on the baking sheet, making sure they don't touch or overlap, so they crisp instead of steam.
  5. Bake for 20-22 mins flipping halfway through, until edges are crisp and golden.
  6.  Let cool for a couple of minutes before packing it in the lunchbox
